ABOUT RAJASTHANI KHOBA ROTI RECIPE

Khoba roti is known by different names. Some call it khoba roti and some call it Jadi roti. Khoba roti comes from the state of Rajasthan (India).This roti is not made as normal roti. It is made with whole wheat flour, salt and ghee. It is rolled slightly thick and the roti is designed according to the individual taste. It's partially cooked on one side and baked the top in preheated oven. This main dish can be served with dal, pickle, ghee or subzi.

Ingredients Serving: 4

  1. Wheat flour 21/2 cups
  2. Ghee (melted) 3 tablespoon
  3. Salt to taste
  4. Water as needed to make a stiff dough

Instructions

  1. Add flour with salt in a large bowl.
  2. Add melted ghee.
  3. Rub the flour well. Make sure the flour is evenly coated with ghee.
  4. Add water little by little to make a stiff dough. Rest the dough for 15 minutes.
  5. Preheat oven to 180 degree centigrade.
  6. After 15 minutes divide dough into 3 to 4 equal balls.
  7. Roll the balls without dusting flour.
  8. Make slashes with a knife on one side.
  9. Flip the roti and make the floral design as per your wish. I used a new nail cutter to design the roti.
  10. The finished floral design on the roti.
  11. Place the slashed side of the roti on a warm non stick tawa. It has to be semi cook only one side.
  12. Once it's semi cooked transfer it to a greased baking tray lined with a parchment paper.
  13. Bake for 20 to 25 minutes or till you see beautiful golden brown colour on top.
  14. Take it out of the oven once done.
  15. Drizzle some ghee on the top.
  16. Serve with ghee, pickle, subzi or dal.
