ABOUT AMER MISHTI ACHAR / SWEET AND SPICY MANGO PICKLE RECIPE

In Summer Season the most awaited fruit is Mango for all of us . Here is an Grandma's recipe for making Sweet Mango Pickle from raw mango using jaggery and spices . This was my favourite Mango pickle and I prepare every summer when tangy , yummy raw mangoes were in season .

Ingredients Serving: 10

  1. Raw mango - 500 gm
  2. Jaggery - 450 gm
  3. Turmeric powder - 1/2 teaspoon
  4. Salt - 1/2 teaspoon
  5. Mustard oil - 1 tablespoons
  6. Whole red chilli - 6 / 7 no
  7. Panch poforon / bengali five spices - 3 tablespoons

Instructions

  1. Frist wash and dry the mango and cut them lengthwise , then spread them a big tray and dry them sunlight for 15 minutes .
  2. Bengali panch phodon is mix of five whole spices . It consists of methi , jeera , kalonji , saunf and mustard is equal portions .
  3. Dry roasted 2 tablespoons of panchforon and red chilli and coarsely grind in a blender .
  4. Heat a heavy bottom pan and mustard oil and bring it to a smoking point and then lower the flame . Add the 1 tablespoons panchforon and red chilli powder for tempering and let them crackle .
  5. Add the dried mangoes to it and some salt and turmeric powder and saute for couple of minutes .
  6. In another pan add the jaggery and 1/2 cup of water and melt them .
  7. Now add the mango melted jaggery and cook for 10 - 15 minutes , keep stirring continuously don't let the jaggery caramelized .
  8. When the mangoes start to turn translucent and the jaggery become a syrup , increase the heat and cook stirring .
  9. Continuously till it comes to a one thread consistency .
  10. Switch off the flame and add the dry roasted panchforon masala and give it a nice mix .
  11. Pour it in airtight container and enjoyyyyyyyyy .
