Pan seared Vegetarian fish ( Aubergine ) parcels

Ingredients to make Pan seared Vegetarian fish ( Aubergine ) parcels

  • Aubergine long 1
  • tomato big 1
  • salt to taste
  • Cheddar cheese cubes / sheets 5
  • garlic powder to taste
  • Black pepper powder to taste
  • olive oil 2 tablespoons
  • Water to boil .
  • Thyme / basil as required

How to make Pan seared Vegetarian fish ( Aubergine ) parcels

  1. Take 1 long smooth Aubergine .
  2. Cut it lengthwise into equal medium thickness slices .
  3. Drop the slices into the boiling water . Add salt to the water . Cook slices for 2 mins till soft.
  4. Remove the slices and place them on a kitchen towel . Drain water .
  5. Place a tomato round slice on top of the Aubergine slice .
  6. Stack a cheddar cheese cube / sheet on top of the tomato slice .
  7. Sprinkle thyme / basil .
  8. Sprinkle black pepper powder , garlic powder ( optional ) to taste .
  9. Roll the Aubergine slices into parcels by bringing opposite sides to the centre . Turn and keep .
  10. Heat pan . Smear olive oil . Place these parcels gently . Pan sear for 3 minutes .
  11. Cover the pan so cheese melts and Aubergine cooks from in to out . Gets grilled effect .
  12. Brush with olive oil . Serve hot . Vegetarian fish parcels / Aubergine parcels ready .
