Arsa is the most sought-after dessert in the Uttarakhand region.This sweet dish is high on the taste meter and low on the calorie meter which makes it so hugely popular. No festival or occasion in Uttarakhand is complete without the magnanimous presence of Arsa.

Ingredients Serving: 4

  1. 200 gm Rice
  2. to taste Jaggery (Brown Sugar)
  3. 300 ml Mustard oil to deep fry
  4. as required Water

Instructions

  1. Soak the rice in water for 3 hours.
  2. After 3 hours, drain the water from the rice and tie the rice in a muslin cloth so that the rice is dried up.
  3. Grind rice into fine powder.
  4. Make thick syrup of jaggery by boiling the jaggery in water until it gets thick.
  5. Mix jaggery syrup and rice in the same manner as are adopted while preparing dough.
  6. Heat oil in a pan. Make balls out of the mixture and roll them into the shapes of puris or dough nuts.
  7. Deep-fry them in hot oil and serve hot.
