Very mild but delicious chicken gravy

Murgh Magaz

Ingredients to make Murgh Magaz

  • chicken 500 grms
  • salt to taste
  • green chillies 5 to 6
  • ginger garlic paste 2 tbsp
  • GRAVY
  • onions 4 to 5
  • chironji 1 tbsp
  • melon seeds 2 tbsp
  • 200 GRMS curd
  • 2 PC cinnamon
  • 2 PC cloves
  • 2 TO 3 peppercorns
  • curry leaves - 10
  • REFINED oil
  • salt

How to make Murgh Magaz

  1. MARINATE 500 GRM BONELESS CHICKEN WITH SALT
  2. 5 TO 6 SLIT GREEN CHILLIES(USE SPICY)
  3. ADD 2 TBSP GINGERGARLIC PASTE
  4. HANDFUL OF CHOPPED FRESH CORIANDERAND MINT LEAVES
  5. MIX EVERYTHING WELL AMD MARINATE FOR 3 TO 4 HRS.OVETNITE IS BEST
  6. TAKE OIL AND ADD 4 BIG ROUGHLY SLICED ONIONS
  7. ADD 2 TBSP MELON SEEDS(MAGAZ)
  8. ADD 1 TBSP CHIRONJI SEEDS AND FRY TILL ONIONS TURN PINK
  9. WHEN THE ONIONS COOL,PUT THE ONION AND SEED MIXTURE ALONG WITH 200 GRMS CURD IN A MIXER
  10. GRIND TO A SMOOTH PASTE
  11. IN THE SAME OIL ADD 2 PC CINNAMON,2 PC CLOVES AND2 TO 3 PEPPERCORNS
  12. ADD FEW CURRYLEAVES
  13. ADD THE MARINATED CHICKEN
  14. FRY THE CHICKEN FOR SOMETIME
  15. ONCE THE CHICKEN IS ALL FRIED
  16. ADD THE ONION PASTE
  17. MIX WELL AND COOK TILL 3 WHISTLES
  18. OUR CHICKEN IS READY
  19. PUT A FOIL ON THE CHICKEN GRAVY AND PUT 2 HOT COAL
  20. ADD PURE GHEE OVER THE COAL AND COVER THE GRAVY TO ALLOW THE SMOKE TO GET INFUSED IN THE GRAVY
