ABOUT Macha Ambula Sorisa RECIPE

An authentic typical Oriya dish which glorifies Odisha Kitchen.

Ingredients Serving: 3

  1. Rohu Fish 300 gm (5 slices approximately)
  2. Mustard oil 2 tbsp
  3. Pancha Phutana (Panch Phoron) 1 tsp
  4. Dry Red Chillies 2
  5. Mustard seeds 2 tbsp
  6. Green chillies 2
  7. Turmeric powder 1 tsp
  8. Salt to taste
  9. Ambula/Dry Mango slices 2
  10. Garlic cloves 5
  11. Turmeric powder 1 tsp

Instructions

  1. Soak 2 tbsp of mustard seeds in 1/2 cup water for 10 mins. Then add the green chillies, garlic cloves, a pinch of turmeric powder to it and make a fine paste in grinder.
  2. Soak the ambula in a little water for 10 mins.
  3. Clean the fish slices, add turmeric and salt to it.
  4. Heat 2 tbsp mustard oil in a non-stick pan and fry the fish slices till they are light golden brown in color. Keep it aside.
  5. To the same pan, add the pancha phutana. When it starts crackling, add the dry red chillies. Then add the mustard paste and soaked ambula to it. Add salt and 1 cup of water to it and cook for 2-3 mins.
  6. Add the fried fish slices to it and cover the pan. Cook for 5 mins at a medium flame.
  7. Now the delicious and authentic Macha Ambula Sorisa is ready! Enjoy it with hot steamed rice.
