Cream of yellow pumpkin soup

Ingredients to make Cream of yellow pumpkin soup

  • Yellow pumpkin 200 gms
  • onion one small chopped
  • garlic two pods ( optional)
  • sugar 1 tsp
  • Milk 1 cup
  • Spring onion stem chopped finely
  • pepper 1 tsp
  • salt for taste
  • Mixed herbs ( optional)
  • Cooked noodles a few small strands for serving or can use bread croutons
  • Fresh cream 1 tsp ( optional)

How to make Cream of yellow pumpkin soup

  1. Cut, wash and peel the yellow pumpkin.
  2. In a kadai or saucepan add a little butter or olive oil. Now add the chopped onion and crushed garlic pods and saute until the onions sweat.
  3. Add the cut pumpkin cubes into the pan, add a pinch of salt and cover the lid for 5 mins.
  4. As the pumpkin gets soft and mushy switch off the flame and let it cool down.
  5. Blend the contents until soft.
  6. Now add a small chunk of butter/oil and add blended puree into the pan.
  7. Add some water or milk and a TSP of sugar and stir well. After simmering it add salt and crushed pepper, Mixed herbs and Mix well.
  8. Serve the soup in a bowl add little cream, chopped spring onion greens, and with fried noodles or croutons. :stuck_out_tongue:

My Tip:

You can add cream of coconut and coconut milk, if u are a vegan.
