Green Amaranth leaves curry

Ingredients to make Green Amaranth leaves curry

  • amaranth leaves 2 pack
  • water
  • salt to taste
  • To fry...
  • red chilli 4
  • urad dal 2 tsp
  • jeera I tsp
  • mustard seeds 1/4 tsp
  • curry leaves 5-6
  • asafoetida a pinch
  • Cooking oil 2 tsp
  • To grind..
  • tamarind gooseberry sized
  • Grated coconut 2 cup
  • Fried spices
  • For splutter..
  • Cooking oil 1 tsp
  • mustard seeds 1 tsp
  • red chilli 1
  • curry leaves few
  • asafoetida a pinch

How to make Green Amaranth leaves curry

  1. Wash, chop and cook smoothly tender amaranth leaves with stem.
  2. Add salt to taste, Jaggery and bring it to boil.
  3. Fry masala ingredients in a pan with low flame till golden brown.
  4. Grind smoothly by adding water, tamarind, coconut in to fine paste.
  5. Transfer the ground paste into cooked amaranth leaves.
  6. Bring it to boil for 2 -3 minutes.
  7. Stir in between so that it doesn't get burnt.
  8. Prepare seasoning and add to it.
  9. Mix well and serve in hot.

My Tip:

If you need add green chilli 1 -2 while frying masala along red chilli.
