ABOUT Alu Fulkopir Singara / Bengali Samosa RECIPE

Bengali singara is different from other samosa. The filling is light and very less spicy.

Ingredients Serving: 10

  1. 2 potatoes (skin on, diced)
  2. 1 cup cauliflower florets
  3. 1/4cup roasted peanuts
  4. 1/3cup peas
  5. 1/2tsp cumin seeds
  6. 1tbsp mustard oil
  7. 2 n 1/2cup water
  8. 1cup all purpose flour (maida)
  9. 2tbsp rice flour
  10. 1/4 tsp Soda bicarbonate
  11. 2tbsp ghee
  12. 1tsp salt or to taste
  13. 1/2ltr Soyabean oil for frying

Instructions

  1. In a heavy bottomed pan add all the ingredients for filling with water and oil in a low-medium flame.
  2. Once the water comes to boil, close the lid and let it cook for 8-10 minutes.
  3. If the vegetables are cooked, remove from the flame and let it cool. Make sure there’s no water left in the mixture of else your singara will break.
  4. In a large bowl, add all the ingredients for the crust except oil and knead till a smooth dough is formed cover the dough and keep aside for 15-20 minutes.
  5. Fold the singara, fill the potato mixture and seal the singara with the help of water. As you can see in the picture.
  6. Repeat the process with rest of the dough.
  7. Heat oil in a Kadhai till hot. Add 6-8 singara together and fry in a low flame till done. Repeat with the next batch of any.
  8. Serve Fulkopir Singara with tomato sauce or Kasundi
