About Shahi pulao Recipe

This is one of my mother's special recipes.

Shahi pulao

Ingredients to make Shahi pulao

  • Basmati rice 1 cup
  • onion 2
  • garlic paste 1 tsp
  • carrot 1
  • potato 1
  • Tomatoe 1
  • Green peas 2 tbsp
  • cashews 10-12
  • almonds 10-12
  • ghee 2 tbsp
  • cloves 5
  • Black pepper 6
  • cinnamon 1 inch
  • Maggi masala pkt 2
  • salt to taste
  • Fresh coriander to garnish

How to make Shahi pulao

  1. Wash and soak rice for half an hour.
  2. Cook rice in 4 cups water till 80% cooked and then drain the water.
  3. Take ghee in pan.Fry cashews and almonds and remove in a small bowl.
  4. Add cloves,cinnamon and black pepper.Add garlic paste .Saute.
  5. Add thinly sliced onions and saute for a minute.Add chopped potatoes,carrots,peas Let them cook till they become soft.
  6. Now add chopped tomatoes and saute till soft.Now add salt and maggi masala and mix well.
  7. Add the cooked rice and lightly mix everything.Add the dry fruits also.
  8. Garnish with coriander and serve hot.
