Malabar biryani doesnt require any biryani masalas except garam masala

Ingredients Serving: 2

  1. 5 slices seer fish
  2. 3 cups basmati rice
  3. Whole spices
  4. 1/2 teaspoon turmeric powder
  5. 1/2 teaspoon red chilly powder
  6. 1/2 teaspoon garam Masala
  7. Salt
  8. 2 onions sliced
  9. 1 tablespoons Ginger garlic paste
  10. 10 green chillies crushed
  11. 1 tomato, sliced
  12. 1 teaspoon garam masala
  13. Small bunch of coriander, mint leaves
  14. 3 Tablespoons curd
  15. 1 teaspoon lemon juice
  16. Salt
  17. Handful of fried cashews, dry grapes,
  18. 2 tablespoons saffron milk
  19. Fried onion, 1 cup

Instructions

  1. Marinate fish with turmeric, red chilly, garam masala and salt.
  2. Shallow fry till done
  3. In pan, heat oil and fry sliced onions till golden brown. Set aside
  4. In cooker, add oil and ghee. Add whole garam items and fry
  5. Add in pre soaked basmati rice. Add 4 cups water and cook rice till done
  6. Another pan, add oil and ghee. Add sliced onion, ginger garlic paste, green chilly. Saute till raw smell goes off.
  7. Then add garam masala and tomato. Cook till it mashes well
  8. Then add in coriander and mint leaves. Then curd and lemon juice goes in.
  9. Top it with fried fish and cook for few min. When done, remove heat
  10. On the top of fish gravy, spread half of cooked rice. Sprinkle garam masala
  11. Then add few teaspoon of saffron milk
  12. Then add fried onions, cashews, dry grapes, coriander leaves, one by one.
  13. Repeat the procedure for another layer
  14. Cover the pan tightly. Keep flame low and cook for 20 min.
  15. Serve immediately with boiled eggs and raita
