ABOUT Motor Shutir Kochuri or Koraishutir Kochuri RECIPE

Matar Shutir or Koraishutir Kachori is an authentic delicious Bengali snack recipe stuffed with spicy mashed green peas and it is best served with Shahi dum aloo or Aloor dum.

Ingredients Serving: 4

  1. All-purpose flour or Maida 2 cups
  2. Salt 1 tablespoon
  3. Sugar 1 tablespoon
  4. Refined oil/ petrified butter/ ghee 2 tablespoon
  5. Warm water to make the dough
  6. Fresh or frozen green peas 2 cups
  7. Green chillies 2
  8. Dry red chilli 1
  9. Roasted cumin seeds 1/2 tablespoon
  10. Ginger paste 1/2 tablespoon
  11. Cumin powder or paste 1/2 tablespoon
  12. Asafoetida/ Hing 1/2 tablespoon
  13. Refined white oil to cook

Instructions

  1. Take a blender and add green peas, green chillies to make a smooth paste.
  2. Now heat a little oil in a pan. Add 1 dry red chilli, cumin seeds, asafoetida in the oil.
  3. Next, add the green peas paste, 1/2 tsp salt, 1/2 tsp sugar, cumin, and ginger paste. Fry it in a low flame. Add 1/2 cup of water and cook it till the water gets dried. Keep it aside. Your filling is ready.
  4. Now take the maida, 1/2 tsp sugar, 1/2 tsp salt, 2 tsp refined oil, warm water and make a smooth and nice dough. Let it rest for 15 minutes.
  5. Make small balls from it and roll them in round shapes. It should be of 4-5 inch diameter.
  6. Now add 1-2 tsp filling in each rolled dough in the center. Keeping the filling inside, take the sides together and close it. Make the balls again. Now again roll them keeping the same diameter measurement.
  7. Heat enough oil in a deep pan for deep frying. When the oil is properly hot, fry them well one by one.
  8. Serve them hot with shahi dum aloo.
