ABOUT Christmas Plum Cake RECIPE

A traditional Christmas Plum Cake.

Ingredients Serving: 8

  1. Wheat flour: 2 cups
  2. All spice powder: 1 tsp
  3. Vanilla essence : 1 tsp
  4. Baking powder: 1 and 1/2 tsp
  5. Baking soda: 1/2 tsp
  6. Eggs: 3
  7. Brown Sugar: 1 cup
  8. Assorted nuts (I have used sultanas,tutti fruity red and green, raisins): 1 cup soaked in 1/2 cup orange juice overnight
  9. Candied Mango cuts: 3 tbsp
  10. Coco powder: 1/4 cup
  11. For Caramel:
  12. 1/4 cup sugar
  13. 1 tbsp water
  14. 1/4 cup water
  15. For icing:
  16. 1 cup cream
  17. 2 tbsp sugar
  18. 1/4 cup dark choco chip/ chocolate
  19. 1 tbsp butter
  20. White chocolate chips for topping

Instructions

  1. Preheat the oven at 180°C.
  2. Sieve together the flour, baking powder, baking soda, all spice powder. Keep aside.
  3. Beat eggs till they are white in color. Then add vanilla essence, butter and beat till its mixed well. Then add brown sugar and beat until well incorporated.
  4. Drain the juice from the fruits and retain the juice for later.
  5. Coat flour on the fruits so that they don't sink to the bottom while baking. Add the candied mango cuts too.
  6. To prepare the caramel, heat the sugar with 1 tbsp water and wait until the sugar is melted. Once the sugar has melted add 1/4 cup water carefully . Be careful while adding water as the water may splash, then bring to boil again. Cool this mixture and keep aside.
  7. Now fold in the flour mix to the egg mix. Mix till it's well incorporated. Add the caramel and fruits and candied fruits and mix well.
  8. At this point add the drained orange juice to meet the right consistency.
  9. Grease a bundt cake pan with butter and pour this mixture into the pan and bake for 30 minutes or till done. While the cake is cooling prepare your icing.
  10. For the icing, heat the sugar, butter, cream and bring it to a boil.
  11. Take it off heat and add the chocolate chips and mix well. Pour this after it's at room temperature on the cake and top it with some white chocolate chips.
  12. You will not be able to resist the aroma and find yourself cutting a nice big piece and enjoying it with a hot cup of coffee!
