ABOUT Mix bhaji roll RECIPE

Mix bhaji roll is a dish which reminds me my childhood time. It is when my mumy used to crack ways of making us eat healthy stuffs! Basic ingredient being potato is always happily invited by a child's dish! My mother also used to roll up different sabjis in a chapati along with some Maggi ketchup! Basically roti rolls (Frankie) is a street food from west Bengal.

Ingredients Serving: 2

  1. TO PREPARE ROTIS :-
  2. 2 cup whole wheat flour
  3. 1 tsp oil
  4. Water to knead the dough
  5. Some oil to roast the roti
  6. FOR INSIDE STUFFING
  7. 5 boiled Mashed potatoes
  8. 1 grated carrot
  9. 1 cup chopped cabbage (Chinese cutting long and thin!)
  10. 1/2 cup Capsicum (chop into small square pieces)
  11. 2 big Onions (chop into small square pieces)
  12. 1 chopped tomato
  13. 1tsp Ginger garlic paste
  14. 1tsp Schezwan Chutney
  15. 1/2 cup boiled peas
  16. 1/2 cup boiled sweet corn
  17. Coriander leaves for garnishing
  18. Salt to taste
  19. 1/2tsp turmeric powder
  20. 1 tsp Dry coriander powder
  21. Oil 1 tablespoon
  22. Tomato Ketchup ( for spreading on roti before filling with mixture prepared)
  23. 1/2 chopped raw onions and cabbage to place on roti after spreading ketchup)
  24. 2 Cheese cubes

Instructions

  1. Mix 1tsp oil and appropriate salt in 2 cups of flour, knead smooth soft dough .
  2. Cover the dough and keep it aside for 30 minutes .
  3. To prepare inside stuffing first heat oil in a pan and add 1tsp Schezwan Chutney.
  4. Add chopped onions and saute it till onions become translucent.
  5. Now add ginger garlic paste into it and saute it till raw aroma of ginger garlic goes away.
  6. Add chopped tomatoes saute it till it gets softened.
  7. Add chopped cabbage and capsicum and saute for few minutes
  8. Add salt,turmeric powder,dry coriander powder and mix it well.
  9. Add boiled sweet corn, peas and mashed potatoes.
  10. Add chopped coriander leaves.
  11. Mix well and saute it for few minutes and cover it.
  12. TO MAKE ROTIS:-
  13. Take small portion of dough and roll out rotis.
  14. Roast these rotis both sides with little oil.
  15. MAKING ROTI ROLL :-
  16. Take a single roti spread some ketchup upon it.
  17. Now put some raw chopped onion and cabbage on it.
  18. Place the prepared stuffing in tube shape in centre of roti.
  19. Now wrap the roti in tube shape and roast both sides for a while.
  20. Now take prepared roll in a serving dish and grate cheese cube on top of it.
  21. Cover one end of roll with aluminium foil or butter paper which ever you prefer!
  22. Your MIX VEG ROTI ROLL is ready to serve.
  23. Serve it with ketchup or green chutney.
