Dudh Puli or Doodh Puli is one of the most traditional and delicious dessert of West Bengal.

Ingredients Serving: 3

  1. Milk 1/2ltr
  2. Sugar 1/4cup
  3. cardamom powder 1 tsp
  4. Chopped dry fruits for garnishing
  5. For carrot halwa -
  6. Carrot grated 1/2cup
  7. Milk 1/2cup
  8. Milk powder 1 tbsp
  9. Sugar 4tbsp or more according to taste
  10. cardamom powder 1 tsp
  11. For puli-
  12. Sooji 1/2cup
  13. Water 1 cup
  14. Oil/ghee 2tsp

Instructions

  1. Heat a pan, add grated carrot, cook on low flame for 3-4 mins stirring continuously.
  2. Add milk and cook till carrot becomes tender and milk reduced.
  3. Add sugar, milk powder, cardamom powder. Cook till all moisture dries.
  4. Healthy carrot Halwa is ready.
  5. Boil water with oil in a kadhai.
  6. Add sooji and stir continuously till it thickens and forms a dough.
  7. Switch off. Cool a bit.
  8. Take out and knead the dough with little oil/ghee till it becomes smooth.
  9. Take a small portion of the dough and stuff with gajar halwa and give any shape as you wish.
  10. Repeat for all and keep aside.
  11. Boil milk in a heavy bottom pan.
  12. When milk reduces a bit add sugar and cook till it thickens.
  13. Add the pulis and cook for 3-4mins.
  14. Add cardamom powder and switch off.
  15. Sprinkle chopped dryfruits and serve warm.
