ABOUT Matar Kulcha RECIPE

Matar kulcha is a famous street food in North India.Especially in Delhi and amritsar.In this recipe dried white peas are used.I always remember to carry my whole year dried peas stock from India.There are so many iteams which i used to carry from India for my kitchen and these peas are on my top priority list.Matar kulcha is favourite food combination of my kids..Younger Son Call kulcha as a mini pizza ,he loves soft kulchas so much.Kulchas can be made in tandoor as well as on tava or griddle.Currently i am living in Vietnam-Hanoi.

Ingredients Serving: 4

  1. INGREDIENTS FOR PREPARING MATAR CURRY:-
  2. Dried white peas 1cup
  3. Water for cooKing dried peas 2-3 cup
  4. Oil 1Tbsp
  5. Cumin seeds/jeera 1Tsp
  6. Chat masala 1Tsp
  7. Roasted cumin Powder. 1/2Tsp
  8. Dry mango powder/Amchur. 1/2Tsp
  9. Red chili powder/Lal Mirch 1/2 Tsp
  10. Garam Masala. 1/4 Tsp
  11. Jaljeera powder. 2Tbsp
  12. INGREDIENTS FOR Toppings
  13. Onion chopped small size 1No
  14. Tomato chopped medium size 1No
  15. Lemon 1No quartered
  16. Green/red chili slit 1-2No.
  17. INGREDIENTS FOR PREPARING KULCHA:-
  18. All purpose flour/Maida 2 1/2 cup
  19. Curd/Dahi /Yogurt 4Tbsp
  20. Baking powder. 1/2 Tsp
  21. Baking soda 1/4 Tsp
  22. Water for kneading dough 3/4 cup
  23. Sugar. 2Tsp
  24. Salt 1/2 Tsp
  25. Ghee /Oil. 2 1/2 Tbsp
  26. Nigella seeds /Kalonji. 4Tbsp
  27. Chopped coriander leaves. 1/4 cup

Instructions

  1. STEPS FOR PREPARING MATAR CURRY:-
  2. Soak the white peas in enough water overnight or for 7-8 hrs.
  3. Drain the water next day and pressure cook the white peas with 3-4 cups of water.
  4. Cook for 1-2 whistles or until matar are completely cooked.
  5. Mash the matar slightly with wooden spoon.
  6. In a pan heat oil on low-medium flame.
  7. Add cumin to hot oil and saute until cumin turns brown.
  8. Turn of the heat and remove the pan from gas.
  9. Now add chat masala,cumin powder,amchur powder,red chili powder and garam masala to the sauted cumin seeds.
  10. Stir and immediately add pour the mixture to cooked matar.
  11. Turn on the heat and cook matar for 3-4 minutes.
  12. Now add jaljeera powder and mix well .
  13. If the matar mixture looks dry add little water.
  14. Cook the matar till all the flavours are mixed properly for About 2-3 minutes.
  15. Keep matar aside while you prepare kulchas.
  16. STEPS FOR PREPARING KULCHA:-
  17. Add maida,baking powder,baking soda,salt and sugar in a big bowl.
  18. Add curd ,oil and little water.
  19. Mix the dry ingredients with wet Ingredients and start kneading dough using little water at a time.
  20. Make a soft and smooth dough.
  21. Cover the dough with kitchen towel.
  22. Let the dough ferment for 2 Hrs.
  23. Heat a tava on medium flame.
  24. Make a small ball of dough,sprinkle some kalonji on ball.
  25. With the help of rolling pin roll into small kulcha.
  26. Sprinkle few chopped coriander leaves on rolled kulcha.
  27. Place kulcha on hot tawa.
  28. While cooking kulcha apply ghee/oil when kulcha is half done.
  29. Cook the kulcha till it get golden spots and is evenly cooked.
  30. Prepare all the kulcha same way.
  31. Serve matar kulcha ,top with onion, tomatoes and chilies.
  32. Squeeze some lemon juice on top and mix lightly.
