Spicy curry made out of brinjal.

Ingredients Serving: 6

  1. Small brinjal 10.
  2. 1 cup semi thick tamrind juice.
  3. Onion 1 big sliced finely.
  4. Tomatoes 2 big ripe chopped.
  5. Few pods of garlic lightly smashed.
  6. 1/2 tesp turmeric powder.
  7. 2tbsp chilli powder.
  8. 3tbsp corriander powder.
  9. Salt to taste.
  10. For Seasoning
  11. 7tbsp oil.
  12. 1/2 tesp sugar.
  13. 1 tesp mustard seed.
  14. 1/2 tesp fenugreek seeds.
  15. few curry leaves


  1. Make cuts in brinjal lengthwise keeping bottom intact.
  2. Heat oil in a pan . Add mustard,let splutter.
  3. Now add fenugreek and curry leaves.
  4. Add onions and garlic saute till light brown.
  5. Add tomato saute for 2 to 3 minutes.
  6. Add the brinjal and saute for 3minutes.
  7. Add turmeric powder,chilli powder,corriander powder,salt and saute for 2 minutes.
  8. Add 1 1/2 cup of water,lower the flame ,cook till brinjal is soft.
  9. Now add tamrind juice let boil to a thick gravy consistency,mix in the sugar.
  10. Remove from flame once you see the oil floating.
  11. Brinjal curry is ready to serve with hot rice.
