Ingredients Serving: 2

  1. Egg-2
  2. Potato -1
  3. Onion-1(medium)
  4. Ginger -1 inch
  5. Garlic-5 tp 6 pods
  6. Tomato-1/2(chopped)
  7. Turmeric powdsr-1/2teaspoon
  8. Red chili powder-1 teaspoon
  9. Coriander Powder-1teaspoon
  10. Salt to taste
  11. Muatard oul-1/4cup

Instructions

  1. BOIL 2 EGGS IN WATER, ALLOW THEM TO COOL, REMOVE THE SHELLS
  2. ADD 1/4 TSP EACH OF SALT & TURMERIC POWDER, RUB ALL OVER
  3. ADD 2 ONIONS, 1 INCH PIECE OF GINGER, 5-6 GARLIC CLOVES INTO A MIXER JAR
  4. ADD 1/4 TSP EACH OF RED CHILI, CORIANDER & TURMERIC POWDERS, GRIND INTO A SMOOTH PASTE
  5. HEAT 5-6 TBSP MUSTARD OIL, SHALLOW FRY THE EGGS & 2 HALVED POTATOES UNTIL GOLDEN BROWN
  6. SET ASIDE WHEN DONE
  7. ADD THE GROUND MASALA PASTE, SAUTE UNTIL THE MASALA LEAVES OIL
  8. ADD 2 CHOPPED TOMATOES, COOK UNTIL SOFT
  9. ADD THE FRIED BOILED EGGS & POTATOES
  10. ADD SALT TO TASTE, SUFFICIENT WATER FOR THE GRAVY, BRING TO A BOIL
  11. COVER & SIMMER FOR 4-5 MINS ON LOW HEAT
  12. THE EGG CURRY IS READY, SERVE HOT WITH RICE / ROTI / PARANTHAS
