Easy to cook , yummy to relish , quick tomato pulao . This is my family ‘s favourite . My grandmother used to cook this quick pulao and serve unexpected guests and relatives .

Ingredients Serving: 5

  1. tomatoes ripe big sized 4 chopped
  2. onions 2 big sized thinly sliced
  3. Basmati rice 4 cups soaked for 20 minutes and drained .
  4. oil 1/4 cup
  5. ghee 2 tablespoons
  6. Bay leaves 4
  7. cloves 5
  8. cinnamon stick large 1
  9. Green cardamom pods 4
  10. nutmeg crushed 1.5 teaspoon
  11. garlic cloves 10 sliced thinly
  12. turmeric powder 1 teaspoon
  13. Red chilli powder 1 tablespoon
  14. coriander powder 3/4 teaspoon
  15. Garam masala powder 3/4 tablespoon
  16. salt 2 teaspoons
  17. cilantros chopped a fistful
  18. Curry leaves 2 sprigs
  19. water 3.5 cups

Instructions

  1. Heat 1/4 cup oil in a pot .
  2. Add 4 bay leaves,1 large cinnamon stick,4 cardamom pods,crushed nutmeg, 5 cloves .
  3. Sauté 2 big thinly sliced onions and 10 garlics sliced . Sauté till light brown .
  4. Add two sprigs curry leaves .
  5. Add 2 teaspoons salt .
  6. Add 4 big ripe tomatoes chopped . Sauté till mushy .
  7. Add 1 teaspoon turmeric powder .
  8. Add 1 tablespoon red chilli powder, 3/4 teaspoon coriander powder.
  9. Add 3/4 tablespoon garam masala powder.
  10. Give a stir so that masala combines well .
  11. Cover and cook till Masala oozes oil . Add 2 tablespoons ghee.
  12. Now take the soaked and drained basmati rice . I soaked 4 cups rice for 20 minutes .
  13. Now add the rice to the masala . Simmer the flame and slow roast the rice gently .
  14. Meantime , heat 3.5 cups water in an electric rice cooker .
  15. At the same time , rice is slightly roasted.
  16. Water is hot .
  17. Transfer the lightly roasted rice to the hot water ( rice cooker ) .
  18. Give a gentle stir . Sprinkle chopped cilantros fistful . Cover the rice cooker and set to cook .
  19. In 10 minutes , tomato pulao is ready . Fluff it up with a fork immediately .
  20. Serve hot with raita .
