ABOUT Nolen Guder (Date plum jaggary) Sondesh RECIPE

Its very tasty bengali sweet. The special jaggary- nolengud is available in winter mainly.

Ingredients Serving: 4

  1. For 1 litre full cream milk
  2. You need about 3 table spoon lemon juice
  3. Nolen gud (Dates plum jaggary) 1 cup
  4. Sugar 1 teaspoon (optional)
  5. If you want add 1/4 teaspoon Cardamom powder at the time of kneading (but I like nolen gur sondesh with it's own flavour no cardamom or other essence)
  6. Raisins (optional)

Instructions

  1. BOIL MILK
  2. ADD LEMON JUICE AND STIR
  3. DRAIN THE WATER
  4. HANG IT FOR ABOUT 20 MINUTES
  5. KNEAD IT WITH YOUR PLAM UNTIL IT BECOMES SMOOTH
  6. ADD 1 TEASPOON SUGAR (OPTIONAL) TO THE WELL MASHED CHHENA AND MIX
  7. IN A NONSTICK KADAI MELT THE JAGGERY
  8. ADD CHHENA
  9. MIX WELL WITH A SPATULA DO IT FOR ABOUT 5-6 MINUTES
  10. TAKE IT IN A PLATE
  11. GREASE THE MOLD WITH LITTLE GHEE
  12. TAKE A SMALL PORTION OF IT
  13. GIVE A SHAPE
  14. PLACE RAISINS ON TOP
