This Dark Chocolate Brownie Cheesecake Mousse Dome is a decadent,rich,silky entremet that is suprisingly easy to make.With a hidden oreo suprise that awakens the child in you while you cut through it. This dessert brings charm to any dinner table leaving your loved ones spell bound.

Ingredients Serving: 6

  1. For brownie base : 150g : Unsalted butter
  2. 1 cup : Brown sugar
  3. 2 large : eggs
  4. 1/2 cup : All purpose flour
  5. 1/2 cup : Cocoa powder
  6. For chocolate cheesecake dome :
  7. 300g : cream cheese
  8. 300g : Whipping cream
  9. 200g : Dark chocolate
  10. 6 : Oreo cookies
  11. For Ganache filling : 300g : Dark chocolate
  12. 180g : Whipping cream
  13. Extras : Chopped almonds
  14. Chocolate Sauce
  15. Chocolate discs
  16. Pearl sprinkles

Instructions

  1. TO A DEEP BOWL ADD 150G BUTTER AND WHISK UNTIL SMOOTH.
  2. ADD 1 CUP BROWN SUGAR ALONG WITH ONE EGG AND WHISK TO COMBINE.
  3. ADD THE SECOND EGG AND CONTINUE WHISKING.
  4. ONCE THE BUTTER,SUGAR AND EGGS ARE WHISKED, SIFT IN 1/2 CUP OF FLOUR AND COCOA POWDER.
  5. FOLD THE FLOUR AND COCOA WITH THE BEATEN EGG SUGAR MIX.
  6. THE BATTER WITH BE THICK, DO NOT WORRY. MAKE SURE EVERYTHING IS COMBINED WELL WITHOUT ANY LUMPS.
  7. ADD THE BROWNIE BATTER TO A SQUARE CAKE TIN LINED WITH PARCHMENT PAPER.
  8. SPREAD THE BATTER EVENLY AND LEVEL THE TOP WITH A SPATULA.
  9. BAKE THIS IN A PREHEATED OVEN @160℃ FOR 25 TO 30 MINUTES.
  10. LETS BEGIN WITH THE CHOCOLATE CHEESE CAKE DOME.TO A GLASS BOWL ADD 200G OF CHOPPED DARK CHOCOLATE.
  11. MELT THE CHOCOLATE INTO SMOOTH PASTE BY HEATING IN MICROWAVE FOR 40 SECONDS.
  12. TO ANOTHER DEEP BOWL ADD 300G OF CREAM CHEESE
  13. WHISK IT TO A SMOOTH PASTE.
  14. NOW POUR IN 300G OF WHIPPING CREAM TO THE CREAM CHEESE.
  15. CONTINUE WHISKING UNTIL STIFF PEAKS ARE FORMED.
  16. TO THIS ADD THE MELTED CHOCOLATE AND WHISK TO COMBINE.
  17. NOW OUR CHOCOLATE CHEESE CAKE FILLING IS READY TO PIPE.
  18. TO A PIPING BAG FITTED WITH ROUND TIP ADD THE PREPARED CHOCOLATE CHEESECAKE MIXTURE.
  19. PIPE IN A GENEROUS PORTION INTO DOME MOULDS.
  20. WITH THE BACK OF A SPOON SPREAD THE FILLING EVENLY UPTO THE TOP AND SIDES OF THE MOULD.
  21. PLACE THE OREO COOKIES IN EACH CENTER OF THE DOME.
  22. TOP THE COOKIES WITH CHOCOLATE CHEESECAKE MIX.
  23. ONCE ALL ARE FILLED LEVEL THEIR TOPS WITH A FROSTING SPATULA AND REMOVE ANY EXCESS.
  24. PERFECTLY FILLED AND LEVELLED.SET THESE DOMES IN FREEZER FOR 4 TO 6 HOURS UNTIL FIRM TO TOUCH.
  25. AFTER SIX HOURS OF CHILLING CUT OUT ROUND DISCS FROM THE BAKED BROWNIE BASE TO THE EXACT SIZE OF THE DOME DIAMETER.
  26. DIP THE SIDES OF THE BROWNIE BASE IN CHOCOLATE SAUCE.
  27. ROLL THEIR WET SIDES IN CHOPPED ALMONDS AND PRESS SLIGHTLY TO HELP THE ALMONDS STICK TO THE BROWNIE.
  28. SIMILARLY PREPARE THE REMAINING BASES.
  29. LETS HEAD TOWARDS THE GANACHE PREPARATION NOW. HEAT 180G WHIPPING CREAM FOR A MINUTE IN MICROWAVE. TO IT ADD 300G CHOPPED DARK CHOCOLATE.ONCE MELTED CHILL IN REFRIGERATOR UNTIL PIPING THICK.
  30. ADD THE GANACHE TO A PIPING BAG FITTED WITH ROUND TIP.
  31. PIPE THE GANACHE IN CIRCLES OVER THE BROWNIE BASE.
  32. SLOWLY REMOVE THE FROZEN CHOCOLATE CHEESECAKE DOMES FROM ITS MOULD AND PLACE OVER PIPED GANACHE.
  33. REPEAT AND ARRANGE THE REST.
  34. NOW THE CHOCOLATE CHEESECAKE DOMES ARE READY. GARNISH WITH CHOCOLATE DISCS AND PEARL SPRINKLES OR TO PREFERENCE.
