Ingredients Serving: 6

  1. 11/4 cup all purpose flour
  2. 1/2 cup brown sugar
  3. 1 cup oats
  4. 1 teaspoon cinnamon
  5. 1/2 teaspoon baking soda
  6. 2 medium apples peeled and grated
  7. 110 soft butter
  8. 1/4 teaspoon salt
  9. 1/2 cup chopped nuts(almonds and walnuts)
  10. 1 teaspoon vanilla extract
  11. 2 eggs at room temperature

Instructions

  1. PREHEAT OVEN TO 180, LINE BAKING TRAY
  2. IN A BOWL, MIX FLOUR, CINNAMON, BAKING SODA, SALT AND OATS. KEEP IT ASIDE
  3. BLEND SUGAR AND BUTTER UNTIL CREAMY
  4. ADD EGGS,1 AT A TIME AND BLEND UNTIL SMOOTH CREAMY AND PALE
  5. ADD VANILLA EXTRACT AND BLEND WELL
  6. GRADUALLY ADD DRY INGREDIENTS AND MIX WELL
  7. ADD GRATED APPLES AND CHOPPED NUTS. FOLD GENTLY
  8. DROP DOUGH ONTO BAKING TRAY AND SHAPE LIKE LOG USING SPATULA
  9. BAKE FOR 20-22 MINUTES
  10. COOL FOR 30 MINUTES
  11. SLICE INTO 1/2 INCH DIAGONAL SLICES
  12. PLACE SLICES ONTO BAKING TRAY
  13. BAKE FOR 12-16 MINUTES UNTIL DRY AND CRISPY IN PREHEATED OVEN AT 180
  14. ALLOW TO COOL FOR 15 MINUTES
  15. COOL ON WIRE RACK COMPLETELY
  16. STORE IN AIRTIGHT CONTAINER. SERVE BISCOTTI WITH TEA OR COFFEE
