Ingredients Serving: 2

  1. Ragi vermicelli 1 cup
  2. Oil 2 tablespoons
  3. Onion 1 medium sized Finely chopped
  4. Frozen carrot cubes and green peas 2 tablespoons
  5. Large eggs 2
  6. Crushed garlic 1 to 1.5 teaspoon
  7. Turmeric powder 1/4 teaspoon
  8. Biryani masala powder 1/2 teaspoon
  9. Salt as preferred
  10. Dried fenugreek leaves crushed 1 tablespoon
  11. Milk 1/4 cup
  12. Unsalted butter 1 tablespoon
  13. Cilantros finely chopped 1 tablespoon

Instructions

  1. Heat 1 tablespoon oil in a pan . Add 1 cup Ragi vermicelli. Toss gently for 2 minutes.
  2. Toss until vermicelli look glossy and lightly roasted .
  3. Remove from the heat . Transfer the roasted vermicelli to a plate .
  4. In the same pan , heat a teaspoon oil . Add 1 medium sized finely chopped onion . Sauté till pink.
  5. Add 2 tablespoons frozen carrot cubes and green peas . You can add fresh veggies of your choice .
  6. Sauté the veggies until soft . Add 1 tablespoon crushed dried fenugreek leaves .
  7. Sauté all together until veggies are soft . Remove from the heat .
  8. Take 2 large eggs .
  9. Beat 2 eggs in a bowl . Add required salt .
  10. Add 1/4 teaspoon turmeric powder .
  11. Add 1/2 teaspoon biryani masala powder .
  12. Add 1 teaspoon finely crushed garlic .
  13. Add a tablespoon finely chopped cilantros . Whisk the eggs to a frothy mixture .
  14. Add the sautéed veggies .
  15. Add the roasted Ragi vermicelli.
  16. Add 1/4 cup milk. Mix all together until combined . Don’t whisk .
  17. Heat a tablespoon unsalted butter on a round medium pan.Spread butter throughout .
  18. Cover and cook in low for 5 minutes/ until there is no raw egg fluid on top . Flip side and cook
  19. until the Omelette is cooked with no sogginess.
  20. Transfer to a plate . High Protein Ragi Vermicelli Omelette is ready .
  21. Cut into 4 pieces like pizza and serve hot . Relish !
