ABOUT Quick Coconut Rice RECIPE

Ingredients Serving: 3

  1. Coconut gratings 2 cup
  2. Water 1 1/2 cup
  3. Salt to taste
  4. Cooked rice 2 cup
  5. Green beans chopped 1 cup
  6. Tomatoes chopped 1/4 cup
  7. Coconut oil 4 tsp
  8. Mustard seeds 1 tsp
  9. Jeera 1 tsp
  10. Jeera chilli slits 4
  11. Asafoetida a pinch
  12. Curry leaves 8-10

Instructions

  1. ADD 2 CUPS OF GRATED FRESH COCONUT, SUFFICIENT WATER TO A MIXER JAR, BLEND
  2. STRAIN OUT THE PULP IN A MUSLIN CLOTH, ADD SOME WATER, SQUEEZE OUT THE MILK, SET ASIDE
  3. HEAT 1 TBSP OIL, ADD 1 TSP EACH OF MUSTARD & CUMIN SEEDS
  4. ADD 1/4 TSP ASAFOETIDA, 8-10 CURRY LEAVES, 1 CUP CHOPPED GREEN BEANS, 1/4 CUP TOMATOES, SAUTE
  5. ADD SALT, 1 SLIT GREEN CHILLI, THE READY COCONUT MILK, BRING IT TO A BOIL
  6. ADD 2 CUPS OF COOKED RICE, MIX & SAUTE UNTIL DRY
  7. TAKE OFF HEAT WHEN THE COCONUT MILK IS ABSORBED COMPLETELY, SERVE HOT
