ABOUT ZAFRANI BIRYANI RECIPE

A healthy kesar flavour rice is perfect for a family lunch .The plate is full of fruits, vegetables and also sweet flavour of saffron.

Ingredients Serving: 2

  1. Basmati rice 1 cup.
  2. Green cardamom 3 to 4.
  3. cloves 4
  4. Bayleaf 1
  5. salt to taste
  6. oil 1tbsp
  7. lemon juice 1/2 tsp
  8. Carrots,Beans and peas 1 cup
  9. ginger 1/2 tsp
  10. curd 1 tbsp
  11. garam masala 1/2 tsp
  12. Red chilli powder 1/2 tsp
  13. apples and plums 1 cup
  14. ghee 1 tbsp
  15. Milk 1/2 cup
  16. saffron few strands
  17. cashews 8
  18. raisins 6
  19. Brown onions 1/2 cup

Instructions

  1. BOIL 4 GREEN CARDAMOMS, 4 CLOVES, 1 BAY LEAF, SALT TO TASTE & FEW DROPS OF OIL
  2. ADD 1/2 TSP LEMON JUICE & 1 CUP RICE, COOK TILL DONE
  3. STRAIN THE RICE, REMOVE WHOLE GARAM MASALA
  4. HEAT OIL IN PAN ADD 1 CUP CARROTS, BEANS & PEAS WITH THE PASTE OF 1/2 TSP GINGER & 1 TBSP CURD
  5. ADD 1/2 TSP EACH OF GARAM MASALA & RED CHILLI & SALT TO TASTE
  6. COOK FOR A WHILE
  7. MIX 1 CUP APPLES & PLUMS, TAKE OFF HEAT
  8. GREASE A PAN WITH 1 TBSP GHEE
  9. SPREAD HALF OF THE COOKED RICE
  10. SPREAD A LAYER OF COOKED VEGETABLES
  11. SPREAD THE LEFT OVER RICE
  12. DROP 1/2 CUP SOAKED SAFFRON + MILK
  13. SPRINKLE 8 FRIED CASHEWS, 6 RAISINS & 1/2 CUP BROWN ONION
  14. ADD GHEE PROPERLY
  15. COVER AND COOK ON SLOW HEAT FOR 5 - 10 MINS
  16. REST FOR 15 - 20 MINS AFTER IT IS DONE, SERVE HOT WITH RAITA
