ABOUT Potato Boondi Samosa RECIPE

This is fusion dish that a samosa is fried with a savoury filling but here I fill them with a special Potato Boondi in sweet form.The taste of this Potato Boondi samosa is enhanced with tich delicious rabadi sauce.Best for festive season.

Ingredients Serving: 8

  1. For Boondi
  2. Gram flour 1 cup
  3. Boil potato puree 1/2 cup
  4. Oil 1tsp sugar 1 cup
  5. water 1/2cup
  6. oil for frying
  7. For samosa
  8. All perpose flour 1 cup
  9. oil 1tbsp
  10. salt 1/1tsp
  11. oil for frying
  12. For Rabdi
  13. Milk 1 liter
  14. sugar 2 tbsp
  15. almond flax 1/2tsp

Instructions

  1. PUREE 2 BOILED POTATOES, 1 TSP OIL & A PINCH OF BAKING SODA & KEEP ASIDE
  2. MIX 1 CUP GRAM FLOUR, A TSP OF WATER & THE THE POTATO PUREE INTO A SMOOTH BATTER
  3. DIP DROPS OF BATTER FROM A GREASED SLOTTED SPOON INTO HOT OIL & FRY FOR 30 SECS ON MEDIUM HEAT
  4. BOIL 1 CUP SUGAR & 1/2 CUP WATER TOGETHER TO MAKE A SUGAR SYRUP
  5. POUR THE SUGAR SYRUP ON THE FRIED POTATO BOONDI, KEEP ASIDE TO COOL & HARDEN
  6. WITH A SMALL BALL MADE OF FLOUR DOUGH, ROLL OUT A SMALL ROTI, SHAPE INTO A CONE & FILL THE SWEET BOONDI INSIDE & SEAL THE ENDS
  7. DEEP FRY THESE SAMOSA CONES TILL GOLDEN BROWN, POUR SOME SUGAR SYRUP ON TOP & SERVE HOT
