Ingredients Serving: 8

  1. Refined flour 1 cup
  2. salt 1 teaspoon
  3. Carom seeds 1/2 teaspoon
  4. Clarified butter 11/2 tablespoon
  5. oil for frying
  6. For stuffing:
  7. Boiled and mashed potatoes 2
  8. salt to taste
  9. Black salt 1/4 teaspoon
  10. cumin seeds 1/2 teaspoon
  11. Pinch of asafoetida
  12. turmeric powder 1/4 teaspoon
  13. Raw mango powder 1/2 teaspoon
  14. Chopped green chillies 1 teaspoon
  15. Garam masala 1/4 teaspoon
  16. coriander powder 1 teaspoon
  17. Chopped coriander leaves 1 tablespoon

Instructions

  1. Into 1 cup flour, add 1 teaspoon salt and 1/2 teaspoon carom seeds
  2. Add 1.5 tablespoon ghee
  3. Add chilled water and knead into a tight dough
  4. Brush ghee on top and leave to rest for 5 minutes
  5. Into 1 tablespoon hot oil, add a pinch of asafoetida and 1/2 teaspoon cumin seeds
  6. Add 1/2 chopped green chilli and 1/2 teaspoon red chilli
  7. Add 1 teaspoon coriander, 1/4 teaspoon turmeric and 1/2 teaspoon garam masala
  8. Add 1/2 teaspoon amchur powder and 1/4 teaspoon black salt
  9. Add 2 boiled mashed potatoes
  10. Add 1 tablespoon coriander,mix and take off from heat
  11. Divide the dough into 2 equal parts
  12. Roll out and cut into a big square
  13. Cut it into 4 squares
  14. Take a small square sheet,fold the edges towards inside
  15. Flip this sheet
  16. Place 1 teaspoon stuffing in the centre
  17. Fold the edges and close
  18. Seal the open ends
  19. Flip it and open the four sides,that were the first folds
  20. Deep fry in oil on medium heat
  21. Remove from heat when golden brown and crisp,serve hot
