ABOUT Thepla quesadillas RECIPE

This is an Indo mexican fusion where the gujrati theplas are used instead of flour tortillas and mixed vegetable with cottage cheese stuffing is done.

Ingredients Serving: 4

  1. Wheat flour-3/4 cup
  2. Pearl millet flour-3/4 cup
  3. fenugreek leaves-1/2 cup
  4. Turmeric-1/2 tsp
  5. Red chilli powder-1 tsp
  6. Curd-1 cup
  7. Sesame seeds-1 tbsp
  8. salt
  9. Asafoetida-1 pinch
  10. Oil-1 tbsp
  11. For stuffing:
  12. Red,yellow and green capsicum-1 cup
  13. Sweet corn kernels-1/2 cup
  14. Cottage cheese-100 grams
  15. Cheese-50 gms
  16. salt
  17. Red chilli powder-1 tsp
  18. Red chilli sauce-1 tbsp
  19. Parsley-1 tbsp

Instructions

  1. TAKE 3/4 CUP WHEAT FLOUR AND 3/4 CUP PEARL MILLET FLOUR IN A BOWL.
  2. ADD 1/2 CUP CHOPPED FENUGREEK LEAVES.
  3. ADD 1 TBSP SESAME SEEDS AND SALT.
  4. ADD 1/2 TSP TURMERIC,1 TSP RED CHILLI POWDER,A PINCH ASAFOETIDA AND A TBSP OF OIL.
  5. ADD WARM CURD AND KNEAD A SEMISOFT DOUGH.
  6. ADD LITTLE OIL AND KNEAD TO A SMOOTH DOUGH.COVER AND KEEP FOR 10 MINUTES.
  7. FOR STUFFING TAKE A TBSP OF OLIVE OIL IN A PAN.
  8. ADD 1 CUP OF MIXED CAPSICUM.SAUTE FOR 2 MINUTES.
  9. ADD 1/2 CUP BOILED CORN KERNELS.SAUTE FOR A MINUTE.
  10. ADD SALT AND 1 TSP RED CHILLI POWDER.
  11. ADD 1/2 TSP SUGAR AND 1 TSP RED CHILLI SAUCE.MIX AND COOK FOR A MINUTE.
  12. REMOVE STUFFING MIX IN A BOWL AND ADD 100 GMS GRATED COTTAGE CHEESE AND 2 TBSP PARSLEY.
  13. TAKE A SMALL BALL OF DOUGH AND ROLL INTO A THEPLA.
  14. PUT THE THEPLA ON A HOT PAN AND ROAST BOTH SIDES TILL BROWN SPOTS APPEAR.
  15. MAKE ALL THEPLAS SIMILARLY AND KEEP COVERED IN A KITCHEN NAPKIN.
  16. TAKE 1 THEPLA AND SPREAD THE STUFFING ON IT.
  17. SPRINKLE GRATED CHEESE ALL OVER.
  18. COVER WITH ANOTHER THEPLA AND PUT ON HOT TAWA AT MEDIUM FLAME TO ROAST.
  19. ADD LITTLE OIL ON ALL SIDES AND LET THE THEPLA BECOME CRISP.
  20. LIGHTLY PRESS TO ROAST UNIFORMLY AND TURN.
  21. ROAST THE OTHER SIDE ALSO SIMILARLY.
  22. REMOVE ON A PLATE AND CUT INTO TRIANGLES AND SERVE HOT.
