This recipe tries to adapt lasagne to our desi Indian palate fusing and trying to make lasagna from our roti and palak paneer.

Ingredients Serving: 6

  1. Spinach half kilogram
  2. Paneer half kilogram
  3. Roti 2 no. s
  4. Grated cheese 3 cups
  5. Chilli flakes
  6. Onion 1 no.s
  7. Mixed herbs
  8. Tomato 2 no. s
  9. Maida 2 Tablespoon
  10. Oil
  11. Butter 2 Tablespoon
  12. Desi ghee 1 tablespoon
  13. Turmeric powder
  14. Red chilli powder
  15. Garam masala powder
  16. Tomato ketchup 1 tablespoon

Instructions

  1. TO PREPARE PALAK PANEER - BOIL HALF KILOGRAMS OF SPINACH (PALAK)
  2. GRIND BOILED SPINACH IN MIXER
  3. FOR PALAK PANEER - HEAT PAN ON MEDIUM FLAME, HEAT ONE TBSPN OF OIL & ADD CHOPPED ONIONS
  4. ADD ONE TSP OF GINGER GARLIC PASTE
  5. ADD TWO CHOPPED TOMATOES
  6. ADD TURMERIC POWDER, LAL MIRCH POWDER AND SALT
  7. ADD GARAM MASALA POWDER
  8. ADD LITTLE WATER AND SAUTE TILL MASALA LEAVES OIL
  9. ADD ONE TABLESPOON OF TOMATO KETCHUP
  10. WHEN MASALA IS DONE ADD PUREED SPINACH
  11. WHEN SPINACH STARTS BOILING ADD HALF KG OF CUBED PANEER PIECES
  12. SAUTE FOR FEW MINUTES AND ADD ONE TABLESPOON OF DESI GHEE
  13. COVER AND COOK
  14. COOK TILL PALAK PANEER IS READY. THE CONSISTENCY OF THIS PALAK PANEER SHOULD BE THICK
  15. NOW FOR PREPARING WHITE SAUCE- HEAT 1/2 TSP OF OIL AND 2 TBSP OF BUTTER IN A PAN ON LOW FLAME.
  16. WHEN BUTTER MELTS ADD 2 TBSP OF MAIDA
  17. COOK FOR 4 MINUTES
  18. ADD 500 ML OF COLD MILK
  19. ADD 1/2 CUP OF CHEESE AND MIX
  20. COOK TILL EVERYTHING IS NICELY MIXED AND KEEP ASIDE
  21. FOR LAYERING OF PALAK PANEER ROTI LASANGA - ROTI, WHITE SAUCE, GRATED CHEESE, PALAK PANEER & HERBS
  22. IN AN OVEN PROOF PAN FIRST START LAYERING WITH ROTI AT THE BOTTOM AND COVER IT WITH WHITE SAUCE
  23. OVER THE WHITE SAUCE LAYER SPREAD ONE LAYER OF PALAK PANEER
  24. AGAIN SPREAD ONE LAYER OF WHITE SAUCE
  25. COVER WITH ONE LAYER OF GRATED CHEESE
  26. SPRINKLE CHILLI FLAKES AND MIXED HERBS
  27. AGAIN REPEAT THE LASAGNA LAYERS WITH SECOND ROTI, OVER IT SPREAD A LAYER OF WHITE SAUCE
  28. FOLLOWED BY A LAYER OF PALAK PANEER
  29. FOLLOWED BY A LAYER OF WHITE SAUCE AND GRATED CHEESE. SEASONED WITH CHILLI FLAKES AND MIXED HERBS
  30. BAKE LASAGNE AT 200° IN A PREHEATED OVEN FOR 15 MINUTES
  31. YUMMY PALAK PANEER ROTI LASAGNE IS READY
  32. CUT INTO PIECES AND SERVE
