Ingredients Serving: 4

  1. For batter
  2. urad dal 1 cup
  3. Big Green chillies 2
  4. Ginger 1 inch
  5. Whole Black pepper 1 tsp
  6. Hing 1/2 tsp
  7. Salt 1 tsp
  8. curry leaves
  9. Rice flour 1 tbsp
  10. For onion vada
  11. Onion chopped
  12. Cabbage chopped
  13. coriander leaves chopped
  14. For thengai pachadi
  15. Coconut grated 1/2 cup
  16. Green chillies 2
  17. Salt
  18. Hing
  19. Thick curd
  20. For Seasoning
  21. Coconut oil
  22. Mustard
  23. curry leaves
  24. oil for deep fry

Instructions

  1. SOAK 1 CUP URAD DAL FOR 3 HOURS
  2. COMPLETELY DRAIN WATER AND RESERVE THE STOCK
  3. ADD CHOPPED 2 GREEN CHILLIES AND 1 INCH GINGER
  4. ADD 1 TSP BLACK PEPPER AND 1/2 TSP HING
  5. ADD SALT AS PER YOUR TASTE AND URAD DAL. BLEND
  6. ADD 2-3 TBSP DAL STOCK AND GRIND TO SMOOTH FLUFFY PASTE
  7. ADD 1 TBSP RICE FLOUR AND CHOPPED CURRY LEAVES. RICE FLOUR GIVES CRISPY TEXTURE
  8. MEDU VADA BATTER IS READY. IT SHOULD BE SMOOTH AND FLUFFY
  9. WET YOUR HANDS IN DAL STOCK AND SHAPE VADA. MAKE A HOLE AT THE CENTRE
  10. ADD THEM TO MEDIUM HOT OIL
  11. FOR ONION VADA, ADD FINELY CHOPPED ONION, CABBAGE AND CORIANDER LEAVES. MIX
  12. SHAPE VADAS
  13. DEEP FRY VADAS ON MEDIUM FLAME. FLIP ON BOTH SIDES TO COOK
  14. FOR PACHADI, ADD 1/2 CUP GRATED COCONUT, 2 GREEN CHILLIES, SALT AND HING. BLEND
  15. ADD 1/2 CUP THICK CURD. BLEND. ADD SEASONING
  16. SERVE MEDU VADA AND ONION VADA WITH THENGAI PACHADI
