Ingredients Serving: 4

  1. Okra/ Bhindi- 250 gms, washed, wiped dry
  2. Cheddar Cheese- 125 gms, grated
  3. Cottage Cheese- 150 gms, grated
  4. Cornflour-1 tbsp
  5. Red Chilli Powder- 1 tsp
  6. Amchur Powder- 1 tsp
  7. Roasted Cumin Powder- 1/2 tsp
  8. Pepper Powder- 1/4 tsp
  9. Fresh Coriander- 2 tbsp, finely chopped
  10. Salt- to taste
  11. Oil- 2-3 tbsp

Instructions

  1. MAKE LENGTHWISE SLITS IN 250 GM OF BHINDIS. 
  2. FOR STUFFING- IN A BOWL ADD 125 GM CHEDDAR CHEESE, 150 GM COTTAGE CHEESE, 2 TBSP CORNFLOUR, 1 TSP AMCHOOR POWDER
  3. 1 TSP CHILLY POWDER, 1/2 TSP CUMIN POWDER, 1/4 TSP PEPPER POWDER, 2 TBSP FRESH CORIANDER
  4. SALT TO TASTE AND MIX WELL
  5. STUFF THIS INTO THE SLIT BHINDIS. PRESS LIGHTLY TO SEAL.
  6. IN 2-3 TBSP HOT OIL SHALLOW FRY THE BHINDIS
  7. COVER AND COOK ON MEDIUM LOW HEAT
  8. TURN THE BHINDIS GENTLY FOR UNIFORM COOKING.
  9. NOW, TAKE OUT ON A SERVING PLATE
  10. SERVE HOT WITH NAAN OR PARANTHA
