Breadfruit is a common vegetable in Mangalore. It is very gummy in texture so after chopping we have to immerse in water minimum 5 minutes. It's curry is so tasty and colorful.

Breadfruit pieces 1 cup
Peeled mango pieces 1/2 cup
Chopped onion 1 cup
Salt to taste
Jaggery syrup 1 tsp
Grated coconut 1 cup
Coriander seeds 2 tsp
Cumin seeds 1 tsp
Red chilli 2-3
Turmeric powder 1/4 tsp
Dry ginger powder 1/2 tsp
Tender Mango pieces 1/4 cup
Water
Coconut oil 1 tsp
Mustard seeds 1 tsp
Red chilli 1
Curry leaves few
Coriander leaves chopped few
Instructions
CUT THE TOP AND REMOVE THE FIBROUS PART AT THE CENTRE OF THE TENDER BREADFRUIT
SLICE THEM IN TO SMALL PIECES, IMMERSE IN WATER TO AVOID DISCOLORATION FOR 5 MINUTES MINIMUM
ADD WATER TO THE IMMERSING LEVEL OF BREADFRUIT PIECES
ADD MANGO PIECES AND CHOPPED ONION
ADD SALT, MIX WELL, COVER AND COOK IN MEDIUM FLAME
ADD GRATED COCONUT, MANGO PIECES, CORIANDER SEEDS, RED CHILLI, CUMIN SEEDS, DRY GINGER POWDER IN JAR
COMBINE TURMERIC POWDER AND WATER
GRIND IN TO A FINE PASTE
IN BETWEEN KEEP CHECKING THE COOKNESS
VEGGIES ARE COOKED
TRANSFER THE GROUND COCONUT PASTE WITH COOKED VEGGIES
ADD SUFFICIENT WATER
MIX WELL
ADD JAGGERY SYRUP, GIVE A STIR, BRING IT TO BOIL
FINELY BOILING
HEAT COCONUT OIL, ADD MUSTARD SEEDS AND RED CHILLI, ALLOW IT TO CRACKLE
ADD CURRY LEAVES, ADD IN TO BOILING CURRY, TURN OFF THE FLAME, COVER A PLATE AND SERVE WITH HOT RICE
