Ingredients Serving: 4

  1. Mutton 750 gram
  2. Kashmiri red chili soaked 6-8
  3. Yogurt half cup
  4. Cumin powder 2 tea spoon
  5. Coriander powder 2 tea spoon
  6. Turmeric powder 1/4 tea spoon
  7. Ginger-garlic paste 2 table spoon
  8. Ghee 5 table spoon
  9. Onion finely chopped 4 medium
  10. Garam masala Powder 1/2 tea spoon
  11. Salt to taste
  12. Charcoal 2 pieces
  13. Dry masalas:
  14. black cardamom 2
  15. cinnamon 1"
  16. Clove 4
  17. Green cardamom 4
  18. Bay leaf 3


  1. Soak red chili and make a paste of it.
  2. Combine mutton, yogurt, powdered masala, 1 tea spoon ginger-garlic paste, red chili paste.
  3. Keep in refrezerator for one hour or more for better taste and flavour.
  4. Heat ghee in a non-stick pan.
  5. Add whole masalas.
  6. Add the onion and saute till light brown.
  7. Now add remaining ginger-garlic paste.
  8. Add marinated mutton and saute for 5-7 minutes.
  9. Add salt and water and cook 7-8 whistles.
  10. Meanwhile light the piece of charcoal and place it in a small metal bowl.
  11. Place the bowl in the centre of cooker.
  12. Add 3 cloves and ghee and cover for 2 minutes.
  13. Add garam masala and serve hot with Rajasthani Missi Roti or steamed rice.
