Laal maas is a royal delicacy of rajasthan and is very very hot and spicy.the main ingredient that gives the fiery red colour to this dish is the use of red chilli paste.traditionally it is prepared with mutton but as i dont like mutton so i have tried this recipe with chicken and its a total hit.do try this recipe.n

Ingredients Serving: 4

  1. Chicken 750 grams
  2. Curd half cup
  3. Ginger garlic paste 1 tablespoon
  4. Kashmiri red chillies 10
  5. Kashmiri chilli powder 1 tablespoon
  6. Garam masala 1 teaspoon
  7. Ghee 4 tablespoons
  8. Onion 2 medium
  9. garlic pods 10
  10. Bay leaf 1
  11. Cardamom 2
  12. Cinnamon 1 inch
  13. Mace 2-3 stranda
  14. Turmeric powder half teaspoon
  15. Coriander powder 1 teaspoon
  16. Salt as per your taste


  1. Take red chillies and deseed them and soak them in hot water for 10 minutes
  2. Make a fine paste of it.
  3. In a mixing bowl combine together chicken, chilli paste,curd,turmeric powder,coriander powder,ginger garlic paste and salt and let it marinate for an hour in refrigerator
  4. Chop the onion and garlic finely and keep aside
  5. Heat ghee in deep vessel and to it add bay leaves,cardamom,cinnamon,clovesand mace.
  6. Lightly saute till fragrant and then add the onion and fry till golden.
  7. Add garlic and fry till the raw smell goes.
  8. Add the marinated chicken, kashmiri chilli powder and garam masalas and cook till ghee starts oozing out.
  9. Now add 1 cup of hot water and cook for another 10 mins.
  10. Serve hot
