Ingredients Serving: 8

  1. 1 small cauliflower
  2. 1 tablespoon ghee
  3. 2 tablespoon warm milk
  4. 1 pinch saffron strands
  5. 1.5 tablespoon sugar
  6. 1 tablespoon sweetened khoya
  7. Handful mixed whole/sliced nuts
  8. 1 Cup water


  1. Soak the saffron in warm milk and chop the cauliflower into florets
  2. After rinsing the florets, boil them until tender using a cup of water
  3. Melt ghee in a non stick pan and sauté the nuts until brown/aromatic
  4. Strain and purée the cauliflower into a paste
  5. Add the paste in the same pan and sauté on Low heat until the moisture reduces (no extra ghee needed)
  6. Add saffron milk and khoya next. Mix well
  7. Once the khoya is well incorporated, add the sugar (less sugar as we have used sweetened khoya. Add more if you use normal one)
  8. Ad the mix comes together, take off heat
  9. Transfer onto a greased plate and layer well
  10. let cool completely before cutting into pieces
  11. Enjoy while you store them refrigerated airtight
