Akki Roti

Ingredients to make Akki Roti

  • 1 1/2 cup of Rice flour
  • 1 large Onion or 2 medium sized onions
  • 1 medium size carrot
  • 2 tablespoon of grated coconut
  • 5 to 6 Beans
  • 2 tablespoon of chopped curry leaves
  • 1 tablespoon of chopped coriander Leaves
  • 1 tablespoon of chopped coriander Leaves
  • 1 teaspoon of mustard Seed
  • salt as per taste
  • water as needed

How to make Akki Roti

  1. First, take a bowl and add rice flour and salt in it.
  2. Chop the onion finely and keep it aside.
  3. Blanch the carrot and beans together in warm water for 5 minutes.
  4. Cut the carrot and beans in very small pieces.
  5. In a pan, add 1 teaspoon of white oil and add Mustard seed in it.
  6. Once the crackling sound started to come, add curry leaves in it and stir fry it for 1 minute in medium flame.
  7. Now add the grated coconut, curry leaves, mustard seeds, small carrot pieces, beans and chopped onion pieces with the rice flour.
  8. Mix it properly and add water in a small amount to knead it.
  9. Make a ball of dense dough. Make 6 small equal balls.
  10. On a flat pan or a tawa and add some white oil in it. Heat on a medium flame.
  11. Add one dough ball in it and carefully press it from the top to make it flatten evenly.
  12. Shallow fry it for 2 minutes, and then flips it on the other side and again fry it for another 2 minutes.
  13. When the crust starts to change its color to golden brown, take it away from the pan and repeat the frying process for the other dough balls.
  14. Finally serve it with Coconut Chutney or Mint Chutney or Peanut Onion Chutney.

My Tip:

When trying to flatten the Dough Balls on the pan, please do it very carefully as the pan would be hot. Else, one can take a foil paper first and place the dough ball over it. Make it flat by applying pressure and then place it on the pan and fry it. One can also add green chillies in it.
