Healthy donuts to munch on . Children wouldn’t stop with one . This is my daughter’s favourite. She enjoys relishing these donuts . Combination of sooji and Sathumaavu / Healthmix makes these donuts super healthy and tasty as well .

Ingredients Serving: 10

  1. Fine Sooji 1 cup equals 150 ml
  2. Whole milk 2 cups
  3. Powdered brown sugar 1 cup
  4. Ghee 1/4 cup
  5. Baking powder 1 teaspoon
  6. Sathumaavu/ health mix 3 tablespoons
  7. For the Mango glaze :
  8. mango pulp 1 cup
  9. Soft Butter 2 tablespoons
  10. Powdered brown sugar 2 tablespoons
  11. Other Ingredients :
  12. Chopped cashews 2 tablespoon
  13. Chopped raisins 2 tablespoons
  14. Oil for Deep frying

Instructions

  1. Boil milk in a wide nonstick pan .
  2. Add 5 tablespoons powdered brown sugar and stir until it dissolves .
  3. Start adding Sooji tablespoon by tablespoon, while stirring other hand to ensure there are no lumps formed .
  4. Stir till milk drains and Sooji is done .
  5. At this stage , add 2 tablespoons ghee .
  6. Stir till one mass Sooji dough is formed .
  7. Switch off the flame .
  8. Transfer this Sooji dough to a greased plate / parchment sheet .
  9. Allow the dough to cool .
  10. Now add a teaspoon baking powder to the Sooji dough .
  11. Add Sathumaavu gradually while kneading the Sooji dough to form a pliable dough .
  12. Divide the dough into two portions .
  13. Take one portion is the dough and using a rolling pin spread the dough into thick sheet .
  14. The rolled sheet shouldn’t be thin . Thin donuts would fall flat .
  15. Now using moulds cut donuts . Use a big mould for the outer shape and a small moulds for the inner hole .
  16. Likewise cut other donuts on the remaining dough .
  17. Now heat oil in a wok for deep frying .
  18. Drop the doughnuts in the hot oil and fry in medium heat .
  19. Donuts puff up in hot oil . Fry till light brown .
  20. Drain excess oil and transfer to a plate .
  21. Likewise fry rest of the donuts .
  22. Whip mango pulp , butter and powdered sugar to a smooth sauce like consistency using a hand blender or mixie .
  23. Spread the prepared mango glaze on the warm donuts .
  24. Garnish with chopped cashews and raisins .
  25. For giving variations , I prepared another batch with powdered sugar topping .
  26. Take powdered sugar in a tea filter and sprinkle powdered sugar on top of the donuts .
  27. Two varieties of donuts ready .
