ABOUT Malai Kofta- No fry recipe RECIPE

I had never tried my hands on this dish as I always thought that this needs to be eaten at the restaurant, till I had one at my sister's place. It turns out super amazing and you can customise the kofta ingredients as per your choice. I have obviously not fried the koftas, giving a health quotient to the protein rich recipe. I have used home made fresh cream. Though a little time consuming, but this is indeed a yummy and simple recipe to try at home.

Ingredients Serving: 4

  1. Paneer- 200- grams
  2. Potato- 2- no
  3. Corn flour- 2- tablespoon
  4. Green Chilly paste- 1- teaspoon
  5. Coriander leaves- 2- tablespoon
  6. Cashew, almonds cut- 2- teaspoon
  7. Grated cheese- 2- teaspoon
  8. Resins- 15- no
  9. Cumin coriander powder- 2- teaspoon
  10. Chilly powder- 1- teaspoon
  11. Garam masala- 1- teaspoon
  12. Salt- 1- to taste
  13. Onion- 2- no
  14. Tomato- 1- no
  15. Whole spices- 1- teaspoon
  16. Fresh cream- 1- cup
  17. Kasuri methi- 1- teaspoon
  18. Mix vegetables- 1- small cup

Instructions

  1. To make kofta Add cornflour, grated boiled potatoes, grated paneer, milk powder, chilly paste
  2. Take corn, green peas, beans or any combination of vegetables as you like
  3. Grind vegetables to a paste, squeeze water and add to kofta mixture
  4. Add cumin coriander powder, chilly powder, salt, pepper powder, coriander to the mixture
  5. Knead the mixture well
  6. Take grated cheese, resins, chopped cashew and almonds for filling kofta
  7. Now make round kofta balls with stuffing inside
  8. Now make paniyaram pan on gas, add little oil in the wells
  9. Place the balls in the pan
  10. Flip them after 5-8 minutes
  11. Remove after they become crisp on both sides. It will take around 15 minutes
  12. To make gravy. Dice onion and tomato. Heat ghee in pan
  13. Add whole spices
  14. Add ginger garlic paste, cashew, almonds and saute well
  15. Add onion and saute till translucent
  16. Add tomatoes and cook till soft
  17. Take the cooked mixture to grinder to make a fine gravy mix
  18. In the same pan, add oil and cumin, mustard, chilly powder and garam masala
  19. Add gravy mixture and cook for 3-4 minutes
  20. Add some water and let the gravy boil
  21. Add fresh cream. I have used home made cream which I homogenised in grinder.
  22. After the gravy comes to a boil, add salt, Kasuri methi, coriander leaves
  23. Mix well. Now the gravy and kofta are both ready. You can do both simultaneously.
  24. Serve gravy in dish, add kofta and garnish with cream and dry fruits
