    Roti Quesadilla with Thecha Mayonnaise

    Ingredients to make Roti Quesadilla with Thecha Mayonnaise

    • 2 green chillies, chopped
    • 1 tbsp peanuts, roasted
    • 2-3 garlic Cloves
    • ½ tsp cumin Seeds
    • Black pepper powder
    • salt to taste
    • 2 tsp olive oil
    • 1 Tortilla
    • 1 spring onion, chopped
    • 1 small tomato, chopped
    • 8-10 coriander Leaves, chopped
    • 100 gm Processed Cheese, grated
    • 100 gm (6 tbsp) Dr. Oetker FunFoods mint Mayonnaise

    How to make Roti Quesadilla with Thecha Mayonnaise

    1. For Thecha Mayonnaise :
    2. In a blender jar, add half green chilli, peanut, garlic, cumin seeds, black pepper, salt and grind for 30 seconds or till a smooth paste is formed.
    3. In a bowl add the above paste, 2 tbsp mint mayonnaise, mix well and keep aside.
    4. For Tortilla:
    5. In another bowl and add spring onion, tomato, coriander, remaining green chili, cheese and mix well.
    6. Heat oil in a nonstick pan (low flame) and cook tortilla from both sides till light brown.
    7. Sprinkle mixture made above on tortilla, add remaining mint mayonnaise & fold over the tortilla like a semi-circle.
    8. Cook for 30 seconds or till crispy. Cut and serve hot with thecha mayonnaise.

    My Tip:

    Sauté few cherry tomatoes, green chillies and serve it with the quesadilla.
