ABOUT Brain Masala ( bheja Fry)/ Maghaz RECIPE

Bheja fry is a classic recipe made with goat brain and freshly grounded masala spices enhancing the taste even more.

Ingredients Serving: 3

  1. Goat Brain 4 big
  2. onions 2 finely chopped
  3. 4 Green Chillies chopped
  4. lemon Juice 3 Table spoon
  5. Red Chilli Powder ½ tablespoon
  6. coriander Powder 1½ tablespoon
  7. Garam masala 1 teaspoon
  8. salt to taste
  9. ginger and Garlic Paste 1 teaspoon each
  10. Plain yogurt 1/2 cup
  11. Cooking oil 4 tablespoon
  12. For Garnishing:: 1 small piece of ginger finely chopped lengthways
  13. Fresh cilantro chopped
  14. Green Chillies and lemon Slice

Instructions

  1. Wash the brain thoroughly and boil in water.
  2. After boiling remove the brain from the water and remove any membrane and nerves carefully. Cut brain into small pieces.
  3. Heat cooking oil in a wok and fry the sliced onion until they are golden brown.
  4. Remove half of the onions and set aside. Add spices, ginger and garlic paste, plain yogurt , green chilies and salt.
  5. Fry well for about 10 minutes by adding a little water if needed.
  6. Add the brain and gently mix it. Do not stir with a spoon. When the oil separates, sprinkle with chopped coriander, lemon juice, finely chopped ginger and green chillies.
