I added sour curd in this dish. It makes it very soft & chewy.

Ingredients Serving: 5

  1. Suji : 2 cups
  2. Sour curd : 1 cup
  3. Salt to taste
  4. Red chilli powder to taste
  5. Mustard seeds : 1 tsp
  6. Raw potato big grated : 1
  7. Onion chopped : 1
  8. Coriander leaves : 1/2 cup
  9. Baking soda : 1/2 tsp
  10. Water as needed

Instructions

  1. In a bowl mix suji, sour curd, salt, red chilli powder, mustard seeds and little water.
  2. Keep aside for 1 hr. After 1 hr if needed add more water. The consistency of the batter should be thick but pouring.
  3. Add raw potato, onion, coriander leaves and mix well. Add baking soda & mix well.
  4. Heat appam pan, pour a drop of oil in all the appam holes and pour batter with a spoon in it. Cover it & let it cook on slow. It will puff a little, now turn its side using toothpick or handle of the spoon.
  5. Again cook on slow flame after few min turn the flame on high. Keep a watch so that it should not get burnt. Cook till done. remove appams in a serving plate.
  6. Serve hot with sambhar or curd or sauce.
