Ingredients Serving: 5

  1. Mutton liver 3/4 kilogram chopped to small bite size pieces .
  2. Bay leaves 2
  3. Cloves 3
  4. Cinnamon stick small piece 1
  5. Sesame oil 3 tablespoons
  6. Onion big sized 3 finely chopped
  7. Ginger garlic paste 2 teaspoons
  8. Turmeric powder 1 teaspoon
  9. Red chilli powder 1 teaspoon
  10. Garam masala powder 1/2 teaspoon
  11. Coriander powder 3/4 teaspoon
  12. Fennel powder 1/2 teaspoon
  13. Freshly ground black pepper powder 3 teaspoons
  14. Salt 1.5 teaspoon
  15. Water to sprinkle 1/4 glass
  16. Coriander leaves for garnishing

Instructions

  1. Heat 2 tablespoons oil in a cast iron wok .
  2. Add bay leaves , cloves and cinnamon stick .
  3. Add chopped onions and sauté till brown .
  4. Add ginger garlic paste . Sauté for 2 seconds .
  5. Add turmeric powder .
  6. Add the liver pieces .
  7. Fry in oil quickly .
  8. Add chilli powder , coriander powder and fennel powder .
  9. Add garam masala powder .
  10. Add salt .
  11. Sprinkle little water and cover the wok partially .
  12. Don’t cover fully as the liver may turn soggy .
  13. When liver turns soft and cooked , sprinkle very little water and slow roast without covering for 5 to 10 minutes in low heat .
  14. Add pepper powder and toss quickly .
  15. Slow roast till the liver looks roasted . The dish will give out an amazing aroma .
  16. Liver roast should look dry . Finally add a tablespoon of oil .
  17. Garnish with coriander leaves .
  18. Serve hot .
