Brinjal curry in curd gravy with whole achari masala.

Ingredients Serving: 4

  1. Brinjal 400gram.
  2. Curd 1cup.
  3. Onion (chopped)1cup.
  4. Turmeric powder 1tea spoon.
  5. Coriander powder1table spoon.
  6. Red chilly powder1table spoon.
  7. Garam masala 1table spoon.
  8. Oil 2table spoon.
  9. Salt to taste.
  10. Achari masala (whole) 1table spoon.
  11. For achari masala:
  12. Cuminn seeds 1tea spoon.
  13. Carom seeds 1/2tea spoon.
  14. Fennel seeds1table spoon.
  15. Fenugreek seeds 1/2tea spoon.
  16. Nigella seeds 1/2tea spoon.
  17. Mustard seeds 1table spoon .
  18. Coriander seeds 1table spoon.
  19. Mix all the above mentioned spices under achari masala caption,and use 1table spoon while tampering.
  20. Ginger garlic paste 1table spoon.

Instructions

  1. Cut brinjal longitudinally and rinse in water.keep aside.
  2. Heat 1table spoon oil in a pan and shallow fry the brinjal for 2minutes ,on low flame.
  3. After 2minutes put out brinjals from frying pan and keep aside.
  4. Heat remaining oil in the pan and tamper with achari masala,add ginger garlic paste with little water .saute for 2minutes and add remaining. Spices.
  5. Stir well ,add 1cup of water .mix well ,when bubbles start coming out ,add salt.
  6. Stire and cook for 5minutes on medium flame till oil separates.
  7. Whisk curd properly and add to the pan
  8. Stir continuously the gravy for 3_4minutes on low flame.
  9. Oil start appearing on the edge,add fried brinjals.stir and add 1cup of water .cover and cook on medium flame for 5_6 minutes or till brinjals are tender.
  10. Put off the flame,garnish with coriander leaves and serve with rice/roti.
