ABOUT Achari Dahi Baingan RECIPE

Deep fried eggplants in a yoghurt based spicy sauce.

Ingredients Serving: 4

  1. Brinjal / Eggplants - 6-7, sliced
  2. Onion- 1, finely chopped
  3. Tomatoes - 2 , pureed
  4. Ginger-garlic paste - 1 tbsp
  5. Curd/ yoghurt - 4 tbsp
  6. Red chilli powder - 1 tsp
  7. Turmeric powder - 1/2 tsp
  8. Coriander powder - 1 tsp
  9. Dry ginger powder - 1 tsp
  10. Cumin powder - 1 tsp
  11. Saunf powder - 1 tsp
  12. Sugar, a pinch
  13. Salt - to taste
  14. Cumin Seeds - 1 tsp
  15. Oil- for tempering and deep frying

Instructions

  1. Slice the eggplants, dust some salt over it and let it sit for 10 minutes. Drain all the water released from it and pat it dry with a towel.
  2. Heat oil in a frying pan and fry the egg plants until crisp. Then set it aside.
  3. In a pan, heat a little oil, add cumin seeds, onions and green chillies. Add the ginger-garlic paste, a pinch of sugar and saute for a minute.
  4. Add the tomato puree, all the spices, salt and cook until the tomatoes are just about done. Then add the curd, mix well and cook until the oil begins to separate itself.
  5. Add the fried egg plants and toss it well.
  6. Serve hot with phulkas or jeera rice.

When you add a bit of mustard powder and poppy seed powder along with the curd ..you get amazing results
