Sev barfi (Singhar jhi mithai)

Ingredients to make Sev barfi (Singhar jhi mithai)

  • 250 grams Sev (without salt)
  • 250 grams Khoya
  • 250 grams sugar
  • 250 ml milk
  • 8-10 pista (shredded)
  • 8-10 almonds (shredded)
  • 2-3 Silver varq
  • 3-4 drops of edible Yellow color
  • 4-5 drops rose essence

How to make Sev barfi (Singhar jhi mithai)

  1. Take a thick bottomed kadai or preferably a non stick kadai.
  2. Add milk, sugar and stir continuously.
  3. After it boils, simmer for 5-7 min and stir continuously.
  4. Now add crumbled khoya to it.
  5. Mix well till the mixture is smooth.
  6. Add color and essence.
  7. Add sev and mix continuously till the mixture thickens (like a soft dough) and switch off the gas.
  8. After it cools, pour it onto a greased thali.
  9. Decorate it with silver wark and garnish with shredded nuts.
  10. After an hour, cut into pieces.
  11. Sev Barfi is ready to eat.

My Tip:

Color can be avoided. Sev has its own beautiful color.
