Ingredients Serving: 4

  1. Arbi(colocasia) leaves- 10-12
  2. besan-1/2cup
  3. Hing-2 pinches
  4. salt to taste
  5. Red chilly Powder-1/2 tsp
  6. chaat masala- 2 tsp
  7. ginger-green chilly paste-2tsp
  8. garam masala-1/4tsp
  9. aamchur powder 1/2 tsp
  10. water as required
  11. oil for fry


  1. Take leaves of arbi. remove the stem and wash under running water. pet dry the leaves on kitchen towel.
  2. in a bowl take besan,giinger- chilly paste,salt,red chilly powder,hing,garam-masala powder, aamchur powder and mix well. add little by little water to get the perfect batter.the batter should not be thick nor runny.
  3. on a plate put a leaf with reverse side up. spread a layer of gram flour batter on top of the leaf put another leaf on the top of the layered leaf and put another layer of gram flour batter. again put another leaf. now we have three layers
  4. now roll the sides of the battered leaf and start folding the leaves set. repeat the process with the rest leaves as well.
  5. Boil one cup of water in a broad bottomed pot. on top of the pot let a steel colander. now put all the rolled leaves on the colander and cover the lid of the pot. cook them on the high heat for about 10-20 minutes.
  6. turn off the heat. take the steamed leaves out and cooled down. cut them into 1/2 inch thick pieces.
  7. Heat oil in a kadhi and fry them for a few seconds on medium flame till golden brown. turn off the heat. sprinkle some chaat masala and serve hot with green chutney.
