ABOUT Arbi Leaf ke Pakaode RECIPE

Its a very old recipe and a perfect rainy day snack. The leaves are coated with gram flour batter and then rolled,steamed,cut and then fried.

Ingredients Serving: 3

  1. Arbi leaves - 10
  2. Gram flour- 1 cup
  3. Onion paste -2 tsp
  4. Garlic Paste -1 tsp
  5. Ginger paste -1 tsp
  6. Dhaniya Powder- 1/2 tsp
  7. Garam masala- 1/2 tsp
  8. Amchur-1/2 tsp
  9. Salt -1 n half tsp
  10. Red chilly powder-1/2 tsp
  11. Hing or asfoetda powder - a pinch
  12. Oil to fry.

Instructions

  1. Wash the arbi leaves and let them dry.
  2. Make the gram flour batter.
  3. Mix all the ingredients and make a thick paste by adding required amount of water.
  4. Now keep the light green side of leave upward and start coating the batter all over the leaf. Then place the second leaf on it with light green side facing upward and coat it again all over. Keep doing the same till 6-7 leaves or may be more .
  5. After this start rolling from one side till the other end. Coat the roll with batter from outside .
  6. Now heat the steamer and let it bake for 10 minutes. With this the gram flour will harden somewhat and later on it will be easy to cut the cutlets.
  7. After steaming is done. Let it cool for 15 minutes.
  8. Now cut the slices and fry them in the oil until golden brown.
  9. The crispy and tasty arbi leaves pakodas are ready to serve.
