ABOUT Hyderabadi Dum Ke Kebab RECIPE

Regal sumptuous kababs are the traditional ones enjoyed in every household on any given day as well as all important occasions of celebration. These are served with khatti dal and rice for a delicious meal. My mother passed me on this recipe and these are a permanent feature at my maternal home and now even mine. They actually melt in your mouth and are irresistible. Happy Frying!

Ingredients Serving: 8

  1. Mutton boneless 3/4 kg
  2. Ginger garlic paste 1 tbsp
  3. Salt 1 tbsp
  4. Red chilli powder 2 tbsp
  5. Turmeric 1/2 tsp
  6. Onion chopped medium sized 1
  7. Garam masala 1 tsp
  8. Cubeb powder 1/2 tsp
  9. Caraway seeds 1 tsp
  10. Juice of 1/2 a lemon
  11. Coriander leaves chopped a handful
  12. Mint leaves a handful
  13. oil 2 tbsp
  14. Bengal gram 1 cup
  15. Yoghurt 2 tbsp

Instructions

  1. ADD 3/4 KG MUTTON PIECES, 1 TBSP GINGER- GARLIC PASTE TO A PRESSURE COOKER
  2. ADD 2 TBSP OIL, PRE-SOAKED ( FOR 1 HOUR ) BENGAL GRAM / CHANA DAL
  3. ADD 1 CHOPPED ONION & ALL THE SPICES
  4. ADD A HANDFUL OF CHOPPED CORIANDER & MINT LEAVES WITH THE JUICE OF HALF A LEMON
  5. ADD 1/2 TSP KEBAB MASALA
  6. ADD 2 TBSP THICK CURD, MIX WELL
  7. ADD 1/2 CUP OF WATER, PRESSURE COOK UPTO 7-8 WHISTLES
  8. NOW COOK UNCOVERED ON MEDIUM-HIGH HEAT UNTIL THE WATER DRIES UP, COOL A LITTLE, ADD TO A MIXER JAR
  9. GRIND TILL SMOOTH LIKE THIS
  10. SHAPE INTO MEDIUM SIZED KEBABS WITH OIL- GREASED HANDS
  11. SHALLOW FRY IN 2-3 TBSP HOT OIL ON LOW HEAT UNTIL GOLDEN BROWN FROM BOTH SIDES
  12. TAKE OFF HEAT WHEN DONE, SERVE HOT WITH CHUTNEY
