Ingredients Serving: 3

  1. Country Chicken with bones 400 grams
  2. Onion 3 big finely chopped
  3. Ripe big tomatoes 2 finely chopped
  4. Sesame oil 1/4 cup + 1 tablespoon
  5. Turmeric powder 1 teaspoon
  6. Ginger garlic paste 1 tablespoon
  7. Garlic cloves 10
  8. Fennel seeds 1 tablespoon
  9. Coriander powder 3/4 tablespoons
  10. Red chilli powder 1 tablespoon
  11. Dried red chillies 3
  12. Curry leaves 2 sprigs
  13. Cilantros fistful
  14. Salt 2.5 teaspoons or as required
  15. Water 1 cup
  16. For grinding spice powder :
  17. Cloves 10
  18. Poppy seeds 2 tablespoons
  19. Whole black pepper 2 tablespoons
  20. Cinnamon stick 2 small
  21. Green cardamom 4

Instructions

  1. Marinate 400 grams chicken with 1 teaspoon turmeric powder, tablespoon ginger garlic paste for 10
  2. mins.Take 2 tablespoons poppy seeds,4 cardamom,10 cloves,2 tbs black whole pepper,2 small cinnamon
  3. and grind them to a smooth powder . Heat 1/4 cup sesame oil in a wok . Drop 3 dried red chillies .
  4. Add 3 big onions finely chopped .
  5. Crush 1 tablespoon fennel seeds and 10 garlic cloves in a mortar .
  6. Add the crushed garlic and fennel seeds to the wok . Sauté until onion turns translucent.
  7. Now add the marinated chicken .
  8. Add the already ground spice powder.
  9. Mix and fry the chicken along with the masala in oil for 2 minutes.
  10. Add 2 .5 teaspoons salt or as required.
  11. Cover and cook the chicken in medium heat for 5 minutes .
  12. Add 2 finely chopped big ripe tomatoes . Sear and cook till mushy .
  13. Add 1 tablespoon red chilli powder .
  14. Add 3/4 tablespoons coriander powder.
  15. Add chopped curry leaves 2 sprigs . Add 1 cup water .
  16. Cover and cook the chicken in medium heat for 10 minutes.
  17. After 10 minutes , add cilantros . Once chicken is cooked ,
  18. raise the flame to high to thicken the curry.Once achieved desired consistency, drizzle oil . Off .
  19. Rayalaseema Kodi Kura / Chicken curry is ready to serve . Serve hot with steamed rice / idli / dosa
