ABOUT Eggplant Manchurian RECIPE

Ingredients Serving: 4

  1. Eggplant 1/2 kg diced
  2. Onion 1 big diced
  3. Garlic finely chopped 2 tablespoons
  4. Ginger finely chopped 2 teaspoons
  5. Salt as preferred
  6. Soy Sauce 1 tablespoon
  7. Tomato ketchup 2 tablespoons
  8. Hot sauce 1 teaspoon
  9. Green chillies slit 2 or more as preferred
  10. Corn starch 1/4 cup
  11. Spring onions chopped 1/4 cup
  12. For batter :
  13. All purpose flour 3 tablespoons
  14. Salt 1/2 teaspoon
  15. Corn flour 1 tablespoon
  16. White pepper powder 1 teaspoon
  17. Ginger garlic paste 1/4 teaspoon
  18. Water 3 tablespoons or as required
  19. Oil for deep frying

Instructions

  1. In a bowl , take the flours , salt , ginger garlic paste , white pepper powder .
  2. Add required water to form a smooth thick sticking batter .
  3. Heat oil for deep frying in a wok .
  4. Dice the eggplants . Dip the eggplant pieces in the batter in such a way batter coated well the vegetable .
  5. Drop the dipped eggplant pieces in the hot oil . Fry till golden . Transfer the fried eggplant pieces to a plate .
  6. Heat a wide pan . Add 3 tablespoons oil used for frying eggplant pieces .
  7. Fry chopped garlic , chopped ginger , diced onions .
  8. Sauté until onions turn translucent.
  9. Add the sauces .
  10. Add salt .
  11. Allow the sauces to cook . Now add the corn starch . Mix and boil the gravy till it thickens slightly .
  12. Add the fried eggplant pieces . Toss quickly so that every pieces get coated well . Cook in high flame till ground gets dry consistency .
  13. Switch off . Eggplant Manchurian is ready . Serve hot .
